Need relevent ads for my site

I have several sites that have adsense placed on them and show more or less relevant ads. I've got a new site though that i'm learning will probably not have relevent ads. Is there anyway to let google know that i only want a certain set of channels(new site) to show ads related to XYZ without messing up my other channels(other sites)?
