Default When SEOing, why does one have to use "quotes" around the keyword(s)?

I mean when people are searching for anything, they don't use quotes. I know I don't.

Why again does it bring different results with quotes and quoteless?

The quotes mean it all has to be together in that order. If I search for:

film school

It will find all kinds of sites that say "I saw a film at my school" or "I saw a school film" as well as "I went to film school after graduating."

But if I search for

"film school"

I only get the last one.
