Default ADSENSE ~ can you block your own impressions to get a true reading?

I read in a post a few weeks ago that someone had edited their Adsense to not include their visits to their site so that anything displayed was truely outside visitors.

Is the possible to do with Adsense or only with Google Analytics?

I'm pretty sure you can do it in openx, not sure about actually through the adsense account. I'm sure someone else will be able to give you the final answer on this.

I suppose you could create some sort of program to display blocks of
the website depending on IP. Seems rather simple to maybe do that
with php, setting a cookie, etc.

I see no reason to do it, however. Just limit your views of your sites
to a handful. It's no big deal.

Sure you can!

It depends on the format of your website.
