obviously if you choose to not renew a hosting and domain, it will die but does there come a point where a site is years old and despite your backlinking and content addition, google says "no more" and your site dies?

Nope, not at all. As long as you keep paying for the domain and hosting, the site lives. Also older ("aged") sites actually get more attention from Google, because an older site typically represents a site whose owner has put a lot of time and effort into it.
