Old domain pages 301 redirect advise needed

I am rebuilding a site complete with new domain name and new page structure for a client. But I would like to pass the link juice and ranking of the old site to the new.

I understand how to permanently 301 redirect a domain name using cPanel, but what about the pages? How can I pass the old pages ranking on to the new site?

You can't do it with all your pages and it is not good SEO trick so it is better to use other method.
