Ranking Categories?

Hey guys,

First of all what do you think about ranking categories? This is what I am plan to do but would like your input in the matter, dont often here people going after a key word with a category.

Another question is when making a category what do you guys think would work best for seo purposes. Btw I have taken out the word category in the url already (done this with yoast seo plugin).

www.mywebsite.com/cat-dog-fish/bigcat/ or www.mywebsite.com/catdogfish/bigcat/
We are all probably aware of the fact that its best to try and get a domain name without the dashes in especially for an emd domain name, so what about the category or post?
