When you are promoting an amazon product what do you look for in your competition? One of the products im looking at get 3600 exact searches per month and only has 2 sites on page 1 that is a affiliate review site, the other sites are walmart, best buy, amazon them self.. So are sites like walmart and best buy that aren't taking seo like they should, easy to over take?

It would depend on how many links there are to the other 2 affiliate sites, and how many to the pages from the major retailers. Use the free SEOQuake plugin for Firefox or (even better) Market Samurai to do the analysis on the keyword's competition.

Amazon and walmart are usually not very difficult to beat. A good rule of thumb to follow is that as long as all the pages of the top 10 have less than 200 backlinks to the page, ranking for it will not be that difficult. Of course, there are also other things that you should factor in (quality of backlinks, on-page seo, etc).
