How do you target long tails without getting slapped by Panda?

I usually build big authority sites and tend to aim for a handful of keywords hence many of my sites have pretty much vanished. My posts where not really seo optimized and gave my vistors exactly what they wanted and conformed with Panda almost perfectly but..
Now I'm thinking of building some smaller sites that pay well, I have loads of good niches in mind, but I wanted to keep them quite broad i.e; site.com/category/long-tail and just target one section at a time and I don't really want to go micro niche EMD however, when I open up the keywords and take a look there are alot of similar keywords, that I'm sure will overlap and be affected by Panda if I used them as the post titles, they are basically asking the same thing.
So how do you get around this, both writing naturally for site visitors and then attacking the long tails? whats the best site structure for long tails?
