You certainly can change the eBay store to an Amazon store. The main reason I don't is because I'm currently a North Carolina resident, and Amazon removed all of us North Carolinians due to an "unconstitutional tax law" that NC passed mid-2009.

As for the privacy policy... it can be added once purchased. I'd be willing to help you set one up post-sale if you'd like.

An opt-in box can easily be added. You could replace one of the ad boxes in the sidebar, or, I could ad one for you once you get everything set up.

Hey ptwain,

Thanks for the compliment! The logo is easy to change, but yes, you'll need to change the name (the graphics are yours to do with what you want once you've purchased). The Installation Guide that comes with your purchase will teach you how to edit the graphics. I use Photoshop, but some say Gimp works well with PSD files. I've never used Gimp, so I can't really vouch for that. However, if you need any help post-sale, I'm absolutely willing to help.
