I suggest starting with shared server first, upgrade to VPS later when your business grows.

Sorry I didn't make myself clear.

I didn't mean change the language... I still want it in English. I just wanted to be able to re-write phrases in a style that's appropriate for the UK, or Australia.

Eg. Realtor = Real Estate Agent, Letting Agent = Property Manager

Do I have full access to the articles and website to change the wording?

Yes, you can. When your blog is up and running, just edit any content you want. It's easy with Wordpress.
