Testing, tracking, stats, conversions

I am in a phase in my IM business where I need to learn and understand testing & tracking for improving conversions before I implement it.

I've done some research, but I haven't found too many products that are dedicated to this particular topic. Weird...

I did find Eric Graham's UCB (Ultimate Conversion Booster), but his reputation seems to be in the "grey" zone, so I'm wondering whether there is anything else that might be a better option.

I'm looking to learn things like: how to configure web stats & how to read them, how to calculate different metrics for my websites (cost per visitor, visitor value etc.) things about landing page architecture, heat mapping, how to craft offers etc.

Is there a good product that covers all of this - or at least a part of this?
