How do you target on facebook ads?

So for example, how do you get very targeted on your fb ads?
If I make an Ad for Deer Hunting as an interest e.g, how would you get more targeted, since you cant target specific pages unless they are in the interests?
Seems to me like facebook have stopped you getting very targeted and made you go broader?
