If I snap a couple of screenshots of for example M$ Word.
Can I use them on webpages and in ebooks freely...?

Since Microsoft Word is protected by copyright, so are screenshots of the application. As such, unauthorized use can constitute copyright infringement.

Certain uses may fall under "fair use." However, there is no definitive definition of fair use--it is generally left to the courts to make such a determination. But, there are some considerations that are used by courts to determine whether a particular use might be considered "fair use."
Is the work commercial in nature? If so, that's a potential strike against you because you are using the copyrighted work for your own commercial benefit.
To what extent are the screenshots utilized? There is no percentage guideline or anything here. The courts would determine whether your use might be excessive.
What effect does the use have on the market or value for the application whose screenshots are being used? This could be a point in your favor, if your use does not detract from but rather adds to the market value of the application by demonstrating certain uses.
You might check Microsoft's website or the terms of use included with Microsoft Word to see if they indicate how screenshots may be used. Some companies may have such uses clearly defined. When in doubt, seek permission.

I was planning to use it in a "how to" ebook.
Now I think it's best to go for OpenOffice,
if it should do the same way as in M$ Word.

      Never mind.
      I'll use OpenOffce instead.
It's even easier to do that than M$ Word.
