They are only really worth what someone is willing to pay. Domain companies known that certain names and words are likely to be more popular so they try and charge more for them.

It's because they have branding power and are usually far more memorable than non premium domains. For instance, people are much more likely to remember carinsurance.com than some long winded alternative.

    Supply and demand. They're commodities.

I domain reseller contacted me by email (called SPAM) about buying a
domain name that was just a hyphen in a different place to my domain
name. They must have done some research to either buy that domain
name similar or mines or snatched it up when it expired and find
    owners with similar domain names.

But, as was mentioned before, value is in the eyes of the buyer.

Generally it is a catchy name, or a popular search term. But this tends to be more for those that own a company which directly services that term, or those who buy with the sole purpose of finding a company to re-market the name too.
I personally buy domains based on their SEO value. I am not so interested in the Name as I am in the incoming links, which is an indicator of how well my site will rank as soon as there is content, as it tends to get crawled quick quick with good relevant links.
