How Do I Increase Conversion Rates

I know there are a lot of very bright people on this forum, so I would like to ask.. What are some great ways to increase your conversion rates?

Right now I have a project I am working on, and we are getting good traffic for only the second week, but conversions are below 1%, which I know should be better, especially in the niche I am in. About 20% of all traffic is going to our purchase page, but about 88% will click on the buy now button, and somewhere in there we loose them.

My partners, and I are just trying to figure out what could be causing this?

Here are some things we have already implemented, which has always increased my conversions on other projects.

- Online Chat Feature
- Professional Web Design
- Educational Videos
- Newsletter Opt in form
- Blog, and Recipe Blog (we are in the diet/weight loss niche)
- Top of the line shopping cart incorporated with Paypal

We are also thinking about adding a talking actress on the page, and want to test to see if that helps conversions. We also understand that the customer has to feel that they can trust us.

Use Google Site Optimizer and try different combos of stuff.
