It depends on what you want? They all are better for different things.

I personally get all my staff from Odesk

I regularly use Rentacoder.com to hire contractors, and I think it's a great site (both for the freelancers and the people hiring them).

Some other good once are Elance, Odesk, Scriptlance, Guru.com

I use Outsource to Freelancers, IT Companies, Programmers, Web Designers from India, Russia, USA, and more - oDesk a lot to hire freelancers. Nothing compares.

Odesk.com and Getafreelancer.com are good places to find freelancers too.
