I have my eye on a domain that is set to expire within the next 2 weeks.

If it is not renewed by the current owner, when will it actually show up as available for me to register?

Do I just need to check on it every day?

It can take a couple of months after it expires.. it depends on who the registrar.

Do keep an eye on it, but the owner will have a chance to renew even after it expires, for a short while.

It takes 75 days to be able to register a domain after it has expired. This is because the name goes into an expired status and then a redemption period. This is so the original owner can get it back if they desire (with additional fees of course). If you really want the domain I would suggest you use a service like snapnames.com to try and grab it for you.
