You can get a plugin that does it automatically.
    WordPress Automatic Upgrade 1.2 Release

    Just used it myself yesterday.
Works a treat and very simple.

You don't even need the plugin anymore, the new version have it build in. You will get a message in your wp-admin to update your WP and you can do it that way. Off course, if you want to keep control, you can do it manually, that way you're sure what steps are taken and that nothing can go wrong.

One question to look at is how long has it been since you upgraded your site? While you can jump major updates and just upgrade from a much older version to the current one, it's been my experience that upgrading in steps for each major update can avoid some hassles.

If it's just one or two versions you should do fine with the auto upgrade feature in WP.

If you're using a version that is old enough not to have the auto upgrade feature then manual is the only way to go. And if you are, here's how to do it:
