Transfering Google App Accounts when Moving Sites to a new Server?

We are in the process of transferring our sites to a new server.

My problem is that we are using Google Apps for our email addresses and also using Google Docs.
Say our domain is xyz.com then we have an email info@xyz.com, support@xyz.com etc. These emails are then going thru gmail to our inbox.

I need to find out how to transfer the emails or Google Apps to a new server host.

I did change the name servers a few days ago and then I started getting email errors that there was no such user at the host for that email address.

So I changed the name servers back to the original ones as I have no idea how to transfer my emails through Google Apps to my new host.

When we transfer the Google Apps to the new host will we lose all of the emails already in my inbox or sent box etc?
Will we lose all of our Google docs that are set up on each particular email account?

I am not sure of the correct terminology or even of the questions to ask, I just hope someone in the forum can help me to find out the way to do this.
