i know pinging your new content helps google index it faster but won't it still get indexed without pinging it?

Yes, it will, but pinging it (supposedly) alerts Google and gets it indexed faster. I've pinged and not pinged and haven't noticed a huge difference.

I haven't noticed any difference myself either. Just make sure you have Google webtools set up for your website and you will be fine as Google will read your sitemap.xml all the time.

I have a few authority sites and Google reads those sitemap.xml every 1 minute, 24 hours a day. No joke either :p So Google knows immediately the moment new content comes up.
