Hi guys.

I put up a site recently. I got an email from someone saying they saw my site was just up, and asked if I wanted some Web Dev work.

Thing is, my email address isn't on the site, how did they get it?

On this website you can see who is the owner of a website, and much more information.

On Linux and Mac, you can run it from the shell. Example:

      whois makemoneyorelse.com

This means that they can script it, and query the database many times until someone will accept their services and give them money.

I believe that some hosting services allow you to be anonymous on whois, for a fee.

Making ownership private does not come from your hosting company unless it's also your Domain Registrar. Depending on your Domain Registrar making the ownership of your domain name private can be called something WhoisGuard Protection or Private Registration. It's offered when you purchase a domain name.
