exit pop popping on when optining in... which is the best one?

Hi,

I have been 'Exit Rescue' for my site at www.lunchboxdiet.co.uk (which I've now tuened off), but it was popping when people opted in and clicked submit which was pretty useless.

Can you recommend the best exit pop for wordpress that doesn't do this?

You could try OptinPop by fellow Warrior, Brian Terry:

It allows a lot of control over the pop-up before and
after visitors subscribe.

It will allow you to place some code on your subscriber
thank you page and then it won't show the pop-up again.
(The owner talks about that feature around 12-minutes

You could hire a programmer to fix 'Exit Rescue' for you - that's probably your fastest solution, and you can get it customized however you want. I am actually a programmer and would be happy to do this for you - PM if interested.
