Best For Recording Skype Discussions?

I have carried out quite a few interviews over the years, and turned many of the interviews into products to sell.
I have carried out interviews by email and by using some of the messenger services where we both typed out our questions and answers.
I am thinking of carrying out a new interview using skype.
Yes we can type in our questions and answers but also we can just talk to each other of course.
Now if I wanted to record the chat as we go along what is best to use?
I have a trial version of Pamela software which I guess I could use?
But what is the best and easiest to use to maybe even create an audio that could be sold along with the transcript of the Interview?
