How do I start a big wiki?

I am working on a site that needs a lot of user submitted content. How do I get people to understand that they are the ones that make the site awesome?

It is going to be a shopping review site so I need reviews and user submitted pricing since these are not online items.

      Im guessing that since pricing will be regional that I would start with local pricing, promote it locally and it should start growing organically.

      So, would people add value to a site that is giving them value? The crowd sourcing model is something new to me.

    Allow your users to get two or three backlinks for the content that the submit. I believe it will make them more interested.
