I was told a while back about a site that allows you to check out the keywords your competition is ranking for on various keywords. Does anyone know the site(s) that do this?

Keyword Research Tool & Keyword Tracking | Keywordspy.com will allow you to see a few and then they have a paid version.

Yes, I heard a lot about Spyfu.com. There are lots of other paid tools that can do this, however.
