I just noticed that my amazon affiliate website has an overall 40% bounce rate over the past 300 visits, but the inner review/product pages have bounce rates of 75-80%+.
The homepage has around 40%.

I am not entirely sure how this works, is it normal for the review/product pages to have a high bounce rate? If they click one of the affiliate links, does that add to the bounce rate?

Bounce rate means just one page is visited. That means you have to change something in your marketing strategy or your content.
If you are using traffic exchanges or safelists where the people are getting credits to view your website then the bounce rate will be high.
