What is a GREAT Food Idea for a Busy Mall location?

I have a friend who is in the process of leasing a high traffic location in the malls foodcourt.

What are some good food concepts? Besides the big names you always see...

He wanted some advice from me and I thought I'd ask my Warrior community

      That's a tough one as in most malls I go to I see a ton of people there during lunch time. Maybe take a poll around the food court when it is busy about what type of food people would like to see come in. You would see the most popular answer from that and that should give you some ideas.

      Typically, merchants insist on a lease clause that states no similar foods may be sold in the mall, otherwise a direct competitor could set up shop right next door. I'm positive Cold Stone has the ice cream/soft serve yogurt angle locked up.

      What I like to see in a food court is Mediterranean or Indian kebobs, rice and veggies. Easy to pre-prepare if there is no on-site kitchen.

    a niche food idea will get you niche sales. go w/ the most popular, pizza/burgers. Just do it BETTER! people will pay for GOOD food and come back, they wont remember the price (within reason of course). If they get a crap burger for .99 they'll be disappointed.

    retail food like that is a tough gig. You are dealing with long hours and managing the bottom of the barrel employees.

    Survey at the foodcourts for a couple of days. Understanding what is the most visitors stall and best selling food. Then sell something that is similar to it. If sandwich is the one with the longest queue, then sell sandwich but with different unique selling point, can go for healthy sandwich, low calories sandwich...
    Another point to watch out is to survey the target market, whether most of the visitors are shoppers or people who work at mall or from offices nearby. If for those who work there, potentially food that easy to be carried away and not as pricy is important.

    I have a friend who had a food stall in a mall is doing this similar survey. The mall main target market is tourist. So he chose to sell local food. He always get a lot of curious tourist asking what is the food and buying to test out. It was so successful.
