What are your thoughts on email conversions? What % turn to buyers?

I have a site that sells a health product. If someone doesnt buy they I collect their email via exit popup.

I offer them a free trial of the system to help them do something. Lets just say its "getting a six pack" and i offer them a free mini series so they can see how effective it is and it actually works.

I am collecthing about 30 - 40 CONFIRMED opt ins a day. So thats about 900-1000 CONFIRMED a month.

Is there any kind of percentage i should be shooting as far as conversions from email to sale?
