Help : Starting a Niche dating website

Im new to this and want to thank all of you for all the support and juicy marketing tricks and news.
I'm very new to this and plan to start very specific niche dating site. I have taken the time to understand the Niche and is confident to say that there is a need to be filled. That said , I what im lacking is the technical background as to whether I should start a site from scratch where I would have zero members or shall I use an already established platform. Now when it comes to dating platforms im so blank its not even funny. White label services I believe we get to use their platform and an exciting member base. So how do we pay the company? A monthly rental fee... can we transfer the members we bring to our own database at any point?
Can I also create my own site and buy profile.
Another question is that these member I get from white label dating companies are they active uses such as my new uses can chat and msg. If yes how do these members know that their profiles are being shared with different Niches and who they replying to ?
And what some other methods other than white label ?
