    I normally contact bloggers directly but try Google'ling Blog Carnivals and I believe there is also a guest blogging directory called MyBlogGuest (No affiliation at all!)

    u need to email the owners of the blog and ask to guest post. you cant just submit one that is auto posted. that is what articel directories are for.

    If you're promoting a diet book, there's not much point in attracting traffic (or even a backlink) from a site that's all about jewelry.

    That's a bad sign, for a site you want to use for this purpose, not a good sign.

    The easier it is to have something accepted quickly, the lower quality the site probably is, and the less likely you are to get any decent traffic from it (and even the backlink won't be worth anything). That's exactly why article directories which auto-accept without any editorial/moderation processes have so little value. Speed and ease are generally in inverse proportion to value, and there are reasons for that.
