Can I use subdomains of a domain with no content?

I have a domain and hosting service which I can use for forward masking a single link. Can I remove the forwarding and masking of the link and put it on a subdomain with many other subdomain links while the main domain is not used? Could each subdomain be masked as well? The subdomains will be mostly unrelated and I do not want to put anything on the main domain since most of the links will be unrelated. I do not want to use a third party service because I want to be in control. Is this something that can be done. Pros, cons? How will this affect SEO and ranking?

One instant concern I'd have would be with people finding a page they like and trying to get to my home page by using the top-level domain name and finding nothing there.

For redirects it is more common to use a folder like 'recommends'. You can put dozens of redirects in that folder and it does not show up as a blank page. There are no seo problems with this. It's a standard affiliate marketing move.

Edit: A sub domain is a type of folder so that should not be a problem, and yes you could use a separate one for each redirect.
