What are some good niches for a dating site?

I am thinking of starting a dating site and am thinking up niches that could be profitable but aren't too saturated.
How do I know whats a good niche and what isnt?

Some niches I thought up for a dating site were: people in a specific province (Boston only, Toronto only, etc), disabled people, people who smoke, people of a certain political leaning, people who are short, etc.

If I could have 1,000 paying members giving me $10/month then I'd be very happy.
I was wondering if anyone had feedback on this before I do it.
