Check if Your Privacy Policy is "Illegal"
First, keep in mind the point of a privacy policy is to disclose your policy. Your policy may only be one sentence: We do not disclose your information Or, We sell your information to others. It is a policy statement.
Second, many policies presume no user information is disclosed to others, but for many marketers making money from advertising this will be incorrect. The FTC has said this is unlawful.
This is why Google requires disclosures if you use AdSense.
Here is one way to check your site: Disable any Ad Blocking and set your web browser to only accept third party cookies with your permission. With Firefox this may be under Tools, Options, Privacy, Accept third party cookies, but to ask for your permission each time. (I use an older FF so this may not be current).
Then visit your websites. If you see cookies being requested then you should assume some type of tracking is occurring. Even if you don't know what it is, you can state in your privacy policy you use third party advertising / services and they may collect and track user information. You may want to add someone can prevent this by setting their browser software to not accept third party cookies.
There may be other ways to track besides using cookies, but it is a quick check for your site you can then compare to your privacy policy.
