What kind of offers for Email Marketing?

Hey guys, I have a few niche (info) mobile apps, which have about 1000-2000 downloads per day each. I encourage users to share the app on social media sites in return for a free eBook. I get about 20-30 requested for the eBook every day and I thought I could start a newsletter signup option inside the apps.
Since I'm new to affiliate marketing, I'm not sure, what to offer. Should I offer "non-spammy" looking ClickBank products (after two or three "info" mails), or are should I find some "signup" CPA offers or anything similar? What would you do?

You considered sharecash.org? People are making insane amount of money there. I remembers I saw some guys making upto $600 per day for downloaded files. There are also others similar to this.

Could you affiliate with sites that pay you per sign ups for apps or downloads? That would be one way to monetize your traffic without actually selling anything. And, it could work, especially since you are working with a crowd of people who like freebies and downloadables.

@awledd: Could be interesting, thanks, I'll definitely check this out. If it's relatively user friendly, I will give it a go.

@Samuel Adams: Yes, some advertisers, like Everbadge and MobPartner have "Offer Walls", which can be easily implemented in the apps. But I'm looking to capture email addresses and start an "email blog" with some product recommendations included.
