Alright when my mother-in-law gives a gift it's a gift and a half. She doesn't hold back. She knows I like tomatoes, as does anyone, but I got A LOT. So, 20 large tomatoes, what should I make or do with them before they go bad? This is your tomato challenge; recipe me. |

Tomatoe casino: Use a square piece of tinfoil. One square for each tomatoe. Cut tomoatos from top to bottom in quarters but leave bottom connected. Place one tomatoe in the center of each tinfoil square (leave one square of tinfoil to make your own tin-foil hat after dinner) Fold up sides of tinfoil so it will hold filling without dripping In sauce pan - saute 1/2 cup onion, 1/2 cup green pepper (per 4 tomatoes) 1 Tablespoon tarragon wine vinegar 2 Tablespoons butter Saute til veggies are medium tender and have wept juices. Pour veggies and juice over tomatoes, in an even distribution. Top with swiss cheese. Fold up ends of tinfoil and twist closed. Bake for 30 minutes on 350 degrees. Suggested combo for guests - Tossed salad, choice of meat, chick, fish, twice baked potatoes, and multi-grain bread or rolls. Good stuff. |

Good cripes. Yes I misspelled tomato........and I bet it isn't gonna change the taste of that Tomato Casino one whit! I will, however, refrain from publishing the recipe unless the error is corrected. Good thing I remembered to remind him to save a piece of tinfoil for a hat.......there's spelling Nazis all over this place......and I'm not just being paranoid! |

Sal your recipe sounds good. The way I would use a whole bunch of tomatoes real fast is to cut them up and saute them into a sauce. It wouldn't be a true spaghetti sauce unless you start with paste and usually Roma tomatoes would be used in that case. What I would make would just be the simple tomatoes that you could use in omelets, as pizza toppings, in stir frys, or just in a bowl as 'stewed' tomatoes. I wouldn't even put anything in them except maybe a little salt and sugar because I just love the taste of tomatoes. If you would rather have more flavor, you can start with a very brief saute of minced garlic and/or onions in a little olive oil before you add your tomatoes. If you want to go glorious add some fresh, chopped organic basil. Just keep cooking them slowly and you will be able to tell when they are in a nice chunky but liquid state. (they will cook more in whatever you add them to). If you just seal that up in a jar or plastic container, it will keep for a while. You could even freeze it. |
