I've been doing some research on this for a book that I am writing. Most all athletes are fit, so I am excluding them. Here are a few celebrities:

Matthew McConaughey - The Guy is a workout nut. He works out with Lance Armstrong.

Usher- His abs speak for themselves.

Madonna- Very a healthy and into Yoga

Hillary Swank

Will Smith

Jennifer Lopez

  I knew someone who taught her ballroom dancing for a movie. Said she was extremely unpleasant to work wtih...very diva-ish.
  
  If I met her in person, my jaw would probably drop and I'd just gawk at her like a stupid drooling breed of dog as happened to me when I met Gong Li in person (weird reaction I know, but completely involuntary).
