I never understood the point of bagels when I was growing up in the UK. They were basically slightly dry, slightly heavy, low quality bread rolls with a hole in them.

Then I studied in the US. And I got a girlfriend from N. Jersey. I went to her house and her family bought 'the best' bagels that exist. They were fantastic. As I understand it, good bagels aren't even available anywhere more than a few miles from NYC.

Anyway, after returning to the UK I tried the supermarket versions again and they sucked. Then I forgot about bagels for a while. Until recently. I had some bagels from Costco and they were.. edible.. kinda.. but nothing like I remembered. So I did an internet search.

And then I followed an internet recipe. And I got.. the best damn bagels I've had since 1999. Fantastic bagels. I've only given them to two friends so far, but they were blown away by how good they were too. Fantastic.

I also bake all my own bread these days following recipes from that site. Fantastic bread making recipes.

I'm in no way affiliated with the site by the way, but after several years of bread making that site took my work to the next level. And I learned how to make bagels =) Yum yum.

    That's a nice site. Makes me want to make Danish pastry - but don't know if I can commit 2-3 days to doing it.
