Favorite Fast and Easy Summer Recipes

Strawberrry and Banana Julius

1 cup fresh sliced strawberrys
1/2 cup frozen banana slices
1/2 cup milk
1/2 cup ice cold water
1/4 cup powdered sugar (optional)
1/2 teaspoon vanilla extract (substitute vanilla ice cream, yogurt or pudding mix)

Blend

Pour in glass glass (not plastic)

Drink

Say "Mmmmmmm!"

    That sounds good. I'm not suppose to have bananas but I'm guessing 1/2 cup sliced really isn't that much. They also say I'm not suppose to have more than a 1/4 cup of milk/dairy a day but I have to admit I fudge on that quite often.

      Hey Kim...

      Substitute more ice water for the milk and cut the banana to 1/4 cup. Just a couple slices of frozen banana will thicken it up a bit.

      Or take out the banana altogether and cut the milk to 1/4 cup so you're within your daily quota.

      If you're into it, an egg white may work in place of the milk/banana, but you're on your own with raw egg whites...Let me know.

        Kurt, just curious why frozen bananas.

        In the summer I tend to eat more veggies and fruits then meats.
        Not really sure why, I tend to listen to my body and give it what it wants.
        In the summer thet seems to be fresh fruits and veggies.

          The main reason is I like them.

          And frozen banana slices are cold (instead of using ice cubes) and I want it to be as cold as possible, without being too thin as they act as a great thickener, almost like ice cream.

          I also find bananas have only a day or two when they are "perfectly ripe" and this is when I freeze them.

    Thom, I'm with you.When its hot I eat a lot more salad food and as many fruits as I can sneak in my diet. Unfortunzately,the dieticians and drs seems to needs as much help deciding whats good and bad as I do. Last year cantelope was a no-no, now they say its good for me again.
    Kurt,the thing that makes bananas so good for others is what makes it bad for me.The potassium,but I have snuck in a banana split a few times in the past couple of years and lived,so I think I can try it they way you posted first and then try variations.

      I found that fruits and veggies are much easier for me to digest in hot weather. They also do a great job of keeping you hydrated and supplying nutrients and minerals and such that you burn through faster in the heat.
      I'd say I also eat a lot of oatmeal, but I do that year round.
      Real oatmeal, not the instant kind has an amazing amount of benefits.

    I remember when there was no such thing as "instant oatmeal".
    Of course,I remember when there was no such things as Mr Coffee coffee machines and no such things as microwave ovens.

      I grew up on instant oat meal. Well by instant I mean my mother got up early and had it all cooked in the pressure cooker before I got up
      The coffee maker got its heat from either a burner on the stove or a hot plate.
      I still don't have or like a microwave. Every now and then I end up with one, but to me they are totally useless.
      I still have my mothers pressure cooker. I just couldn't seem to find the weights for the top and the cooker at the same time. Now that I live alone I don't have much use for it

    My grandma and aunt used to use a pressure cooker. They were country folks and I'd spend every summer with my grandparents . My uncle and my aunt lived in a house they built on land about a 1/4 mile from my grandparents farm.
    My brother and I would pick assorted vegetables rom the fields and then grandma would can the. Corn,snap beans,peas,and tomatoes are what I remember the most as far as vegetables went.
    We also picked plums,blackberries and raspberries and they would can them and also make jelly out of them. What I would give for some of my grandma's plum jelly.
    Sorry for the hijack Kurt.
    PS: Thom, my parents house had a stove,we were city dwellers,but when at my grandparents the cooking and coffee making (done in a perculator coffee pot) was done on a wood-burning stove.

        I don't have an aversion to citrus,but my intake is limited, but I am always looking for new things to both eat and drink.

        I have the same problem, so I bought a juicer and love it. My main ingredient is cantaloupe and whatever fruits and veggies are on sale. It's pretty easy to get your 5+ daily servings of fruit and veggies using a juicer.

          Last time I was at wallymart they were so bad I didn't buy one.

            I bought the Jack Lalanne 4-5 years ago and it's still going strong.

            However, I just read the reviews on Amazon and it seems like the newer ones have a lot of issues, so I'm not sure whether to recommend it or not.

            Just make sure you get one with a wide mouth, as it saves a lot on cutting.

            BTW, I don't really like carrots, but love fresh carrot juice (blended with cantaloupe).

    Hello,

    I have a very delicious recipe, hope you will like that.

    Italian Tomato Pasta Recipe.
    1 (8 ounce) package angel hair pasta
    1/2 cup zesty Italian dressing
    2 tomatoes, chopped
    1/4 cup grated Parmesan cheese

    How to make?
    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 4 to 5 minutes or until al dente; drain and place into a large serving bowl. Toss with dressing and tomatoes. Top with Parmesan and serve.

    Once try this. It's really amazing.

    Tasty BBQ Corn on the Cob
    1 teaspoon chili powder
    1/8 teaspoon dried oregano
    1 pinch onion powder
    cayenne pepper to taste
    garlic powder to taste
    salt and pepper to taste
    1/2 cup butter, softened
    6 ears corn, husked and cleaned

    Directions

    1. Preheat grill for medium-high heat.
    2. In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter. Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.
    3. Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork. Turn corn occasionally during cooking.

    Grilled Chicken Caesar Salad:

    [serves 4]

    4 split chicken breast
    Romain lettuce
    Ceaser dressing
    Diced red onion (to taste)
    Croutons (1 cup) - Italian flavor

    1) Grill chicken until cooked, chop into bite size pieces.

    2) Chop romain lettuce into 1" squares

    3) Combine cooked chicken, lettuce, red onion, & croutons into large bowl & toss with large spoon, or salad tongs.

    4) Put grilled chicken & lettuce mixture on individual plates & add dressing to taste.

    I eat this at least once a week, Mmmm...

    I've changed this recipe a bit...

    banana
    strawberries
    blueberries
    grapes
    Cup of V8 "Fruit Fusion" banana and strawberry flavor

    Blend thoroughly...Then add:

    4-5 ice cubes
    Cup of Greek yogurt
    Packet of strawberry Carnation Instant Breakfast
    Heaping tablespoon of fiber

    Blend thoroughly...

    Tastes so good! And it's good for me too.
