Technically, vegetable soup is a mix of vegetables anyways. Isn't it?

I wouldnt regard onion soup, or mushroom soup as vegetable soup...

Soup is awesome though. Split pea soup in particular!

        That would be fungus soup
I agree vegetable soup is mixed vegetables.
I also have to agree with soup being awesome, especially split pea

Technically, split pea is fruit seed. So that would be fruit seed soup, not vegetable soup.

Wow, tough crowd. Ask a simple question and get rung up on technicalities.

Yes, I love vegetable soup. Especially the kind called beef stew.

      Agreed.

I put in a tin of stewed steak, potatos, carrots, fried onions, 3 beef stock cubes, 1 chicken stock, basil, salt, pepper and a bit of flour to thicken. Served with crusty white bread.

That's how I do my onion soup.

I toast a slice of bread and cut out a circle by pressing an upturned mug onto it. It sits in the bowl nicely and looks professional to boot!

Yep, onion soup, too. I like bread or crackers in all my soup though - sometimes cheese. Soup to me isn't enough of a meal without some carbs stuck in it. But I eat heavier than most people.

And beef stew is okay -- but it just can't compare to good homemade chicken and biscuits or dumplings. That's kinda like soup. Close enough for me anyhow.

What are the dumplings like? I'm trying to get a visual. Something like this?

Those look like dumplings - unless they are potato. Dumplings are made of flour.

I don't make cauliflower soup but broccoli cheese is incredible - I love augratin cauliflower, though.

Dennis - beef dumplings you make the same as chicken dumplings -- ya just use beef instead of chicken.

Sal, I kind of figured that, the trouble is neither of us know how to make a good dumpling. I've never tried, and my wife's are, well, weird.

Okay - this time I see the thread is a rerun - but Dennis seems to need help.

Any recipe from an old cookbook for dumplings is usually okay - I use just a tad extra (maybe half a teaspoon) more baking powder than most recipes call for. The trick is in the method.

Get the meat/gravy to a boil before you drop the dumplings in it. Reduce the heat once you get the dumplings in so stuff doesn't burn. And make them about the size of two golf balls together. Just the very outside will be a tad gooey and the inside will be fluffy. Awesome.

Yes, but it's got to be home made, and preferably with chicken stock, not vegetable. Current fave is Baba Ganoush soup, with roasted aubergine, garlic, tahini and stock, finished off with a beaten egg and lemon juice. And in the winter there's nothing to beat home made lentil soup, with carrots, leek and a bit of neep . Carrot & coriander or curried parsnip soups are good too.

Neep? Oooh, that's so Scottish that even some Scottish people don't know whether it's swede or turnip!

Sounds good! My wife brought a new beef stew recipe home from work the other day and we had it last night. It called for a cup of red cooking wine. I gotta tell ya, it was excellent.

Peas are legumes. And they make awesome soup.
I love veggie soup - especially with toasted bread on top and a layer of parmesan cheese. I like to make my own and just dump different combinations of veggies in. It's hard to make a veggie soup that isn't good.

Yeah, I do a chicken casserole with the same recipe as my Beef Stew but with chicken breasts in place of the stewed steak and 4 chicken stock cubes. Once the meat and potatos etc are eaten it leaves a nice chicken and onion soup. Stock cubes are awesome things.

I really need to escape the office this week to spend some time in the kitchen..
