I saw a post of FB a few minutes ago where someone had a picture of a Tostada that they made,and the listed the ingredients. Among them they included "refried" vegetarian beans".
I'm sorry,is there some other kind of beans I have never heard of before today?

    Kim, this one is easy. The beans are made of vegetables instead of vegetables. :rolleyes:

    No - the key is in the 'refried' part -

    Mexican cooking frequently uses LARD - pig fat -

    So vegetarian style 'refried' would be with vegetable fat (I think like Crisco).

    Both cases beans are like vegetables (I think 'legumes').

      I make refrieds with either butter, vegetable shortning, bacon grease or margarine, but lard is traditional. My most common method is margarine with a touch of bacon grease for flavor.

      The "refried" comes in because the beans are already cooked (steamed/boiled), then cooked again using some type of grease or oil(fried).

    Seriously though, I didn't know that. But... should that be "vegetarian refried beans" then, rather than "refried vegetarian beans?"

        Vegetarian beans are cooked without animal products. Typically beans, like for Boston baked beans, are cooked with salt pork and/or bacon (maybe other ways, too).

        Refried vegetarian beans may not be vegetarian anymore, if they refried them using bacon fat or other meat by-product.

        In other words, poor word usage means you really don't know what you'll be eating.

    Well, Pat and Tina have certainly tried to take away our chance to have fun with redundant redundancies. I'm so disappointed that it disappoints me. Seriously, I'm not kidding. I think this could have been a fun thread, I think. But now, all we can do is move on now.

    So, re-fried beans doesn't mean fry it once, refrigerate it, fry it again and serve hot?

    That was always my impression.

    Makes me wonder about twice baked / double stuffed potatoes ...
    as well as other things now

      Ah, I can answer for the twice baked potatoes ... yes they are baked twice, but between the first baking and the second secret ingredients are added. I have a friend that owns a restaurant with his brother, and they have the best twice baked potatoes around. He actually told me the recipe once when we were cooking out steaks and, yes, twice bakes. They were really simple actually, just a handful of ingredients. Can't remember what they are now though, as this was years ago. I think garlic was one of them.

    Dennis - the twice baked I have had they just scoop out the potato and mash it with butter, salt, garlic whatever and then put it back in the skin and bake it again - (and put shredded cheddar cheese on it for the 2nd bake.)

    Pat, that sounds like the main ingredients they used at Mickey's, except there were a couple of other spices too. That's probably what made them better than everyone elses. I think there was sour cream in them too. Chives and white pepper may have been part of it.

    The reason they needed to SPECIFY the beans as vegetarian refried beans is because the TRADITIONAL way of making refried beans uses PORK FAT. When you dump pig fat into a vat of water and reduce it over a low heat and clarify it at the end, you end up with LARD and fried rinds.

    I'm vegetarian and I'd definitely want to know what's up with the ingredients in my food.

      Thinking of this thread yesterday made me chuckle. Had a conversaiton with a woman at work - she's a bit naive and jumps on whatever big trend her friends are following at the moment or what she's heard about recently.

      She was telling anyone who would listen (and those of us trying to avoid listening) about her "vegetarian vegetable" diet. That was good enough for a chuckle but it got better when she showed us the "vegetarian" lunch she brought from home. Some kind of salad with mayonnaise....AND little pieces of ham. I don't think she's quite got the idea yet:rolleyes:

      But they didn't specify 'vegetarian refried beans', Steve. They specified 'refried vegetarian beans'. That could mean the same thing in their mind, but it does leave things open to interpretation.
