How many restaurant owners hire an outside artist for their A frames, menus, and wall art?

I am a chalkboard and lettering artist in Manhattan. I am curious about the percentage of restaurant owners or managers that use outside artists for their chalkboard or artwork needs. Who do you use for art? Is it someone on staff like a waitress? If someone approached you about doing art for your restaurant would you be open to discussing it?

    When you find a restaurant in Manhattan that uses A-frames and chalkboards, visit them during a slow time and simply ask them. Maybe use a quick sketch of your idea for their current chalkboard as a leave behind.

    The percentage that use outside artists doesn't matter. What matters is finding enough that do to fill your dance card.
