setting up client email address

I'm designing my client's website, and we've agreed to have their site hosted by my current hosting account. That's great but the client wants an email address for her domain. How should I configure her email address? Because her domain is an "add-on" domain, when she accesses her email than she'll have access to all my emails in the hosting account. How do you guys set up clients' emails? Any help would be greatly appreciated.

I use google apps to create email accounts for clients (emails can be anything@yourdomain) You can create up to 50 accounts on the free version. It's great because you don't have to access your hosting email at all. You would just create a google account and change over your MX records so all mail is forwarded over. It gives you all the accessibility and functionality of having a gmail account only at your domain. Get info on the free google apps HERE

I am in the process of creating a tutorial on how to do this - subscribe to my list for the next release, I should have this one done within the next week or so.
