Important Question About Hosting, Need Help!

OK, I haven't checked this yet, but my question is...

If I am transferring a sites hosting and domain info, do I need to set up the email addresses again on the new server and setup forwarding etc?

      Yes, you would need to set it up again. The information on the old server would become irrelevant once you update the dns to point to your new web host.
