On-Page SEO & FB Thumbnail Questions

I've built up several Wordpress blogs and sites without paying much attention to SEO. Now that I'm reviewing them again, I have a few questions - using my 'test' blog EdmundLoh.com before I carry over the same changes throughout all of them.
1. FB Full-Width Thumbnails For Blog Posts / Pages
I know that to have a link achieve full width display is to have the image at 484x252 px dimension. I've done this for all of my Pages on EdmundLoh.com (set in Featured Image) but when I tested putting them on Facebook posting, they don't necessarily appear.
For example:
Media - EDMUND LOH dot com
This is what showed up on Facebook:
This is even though I placed the 484x252 px image in the Featured Image section for this page.
Other Pages and Posts are inconsistent too - some of them are showing correctly with the full display on FB; others are half-display like the above image.
Does it take more than just setting it on "Featured Image"?
2. FB Thumbnail for Home Page (especially if Blog home page is Blog Posts)
Is there a way to set a permanent FB thumbnail for the blog home page instead of it picking up the thumbnail of the latest blog posts?
3. FB Shared Link Description
Also relating to Question [1], notice that the text merely takes off the early sentences from the said Page. This is in spite of me already setting a custom description up in Wordpress plugin SEO Yoast, like below:
Or am I missing something?
4. SEO Meta Description for home page
Is there also a way to edit the Description for the main home page (EDMUND LOH dot com - Internet Entrepreneur. Consultant. Speaker.) without it showing the latest blog post excerpt? Again I did this in an SEO plugin in my Wordpress panel but it seems not to be taken instead.
5. SEO Directory
How do I achieve this kind of listing when visitors search on Google?
Was told to just do XML Sitemaps, don't think that did the job!
Looking to get solutions on the above mentioned, so I can carry this out to the rest of my blogs in the similar fashion.
