I know the server IP has to be different. But I have a host that offers different servers in different countries with different IPs, but the Name Servers and the IP address of the Name Server if you set a custom one, is the same for all of them.

Will that affect SEO if I link to the same money site?

Google knows the GEO location (traceroute) of any server that has indexed pages.

What if I create a custom "Host Name" to have my own Name Server on that host?

I know you are looking for the short cut and ease of having everything hosted with one provider but its a bad choice. Google is a server based operations. You are not going to fool them. If you don't have anything much invested in your PBN then take the risk i guess but if you do then just take the plunge and find additional hosts for real
