Advice on-Page vs post changing product-deleting

Looking for some advice on the best and/or proper way of doing this.
I have a site, WordPress, that will have products that will be changing often.
Product examples would be: '95 Honda CR250, '94 Honda CR250, 94 Suzuki RM125, etc.
As these items are no longer available, I was going to just delete the page or post and redirect the url back to my main products page.
I do not want to just edit/update the product page with a new product in the event a customer follows an old link to it. I was thinking either keep the page, put item sold with a link to view other items or just delete it so I dont have to many pages down the road.
Is deleting old pages or posts bad and if so how should something like this be handled?
