In webmasters tools, I noticed that all 10 of my sites have 2 crawl errors for the privacy-policy pages and or contact pages, any idea what I am doing wrong here?

Also, for site maps, I download the xml sitemap wordpress addon and create a sitemap, then submit each page to under the "add sitemap" option in the google webmasters tools, right?

In what category were the two crawl errors? Was it in HTTP, In Sitemaps, Not Followed, Not Found, Restricted by robots.txt, etc? Check the dashboard, it will show there.

As far as sitemaps are concerned, if you use the Google XML Sitemaps plugin by Arne Brachhold, then when you generate a sitemap for the first time, or when your blog gets updated, a new sitemap is automatically created and Google, Yahoo and Ask.com will be notified, so they should, in time, check your robots.txt for the location of the sitemap and pull the sitemap automatically.

On more established blogs, when Google is notified by the plugin that the blog has changed, Google will actually check the RSS rather than check the sitemap, and index new content based on what it finds on the RSS. But submitting the sitemap is good for new sites, as Google has no idea of the extent of your content. When you manually submit a sitemap, you only submit one sitemap. It is a map of your entire site. You do not need to submit a map for each page as you suggested in your original post. Hope this helps.
