I can never seem to outrank these sites and when I'm targeting small niches , so they always show up

products.howstuffworks.com
consumersearch.com
amazon.com
nexttag.com

right now I'm ranked 7th on 1st page but the sites above are killing me... any tips on how to beat them so I can be #1 ?

It's hard to say exactly, not knowing the search term you're trying to rank for, but here's a couple of general tips:

1 - It's often easy to have better on page SEO than they do for a particular term
2 - Assuming that you're trying to outrank one of their inner pages, simply throwing a lot of quality backlinks at your page suffices.

Often, when I see one of those site (or others like it) in the top 10, it's a pretty good signal that this is a keyword worth pursuing. Those sites seem to scare a lot of people away when in reality they are often very vulnerable.

I'm sorta taking the xfactor/trever somerville route with adsense , targeting small niches with high searches , no competition hardly ...

I have had this site up for about 2 weeks now , It first ranked 9th , then 8th , now 7th ... I wrote an article , and did a little social backlinking

Correct me if i'm wrong , should my site eventually move up in rankings ? it's pretty new so it makes since , right now I have about 8 pages on it .... all pages are seo'd

just curious because I have never made sites with such small competion not used to the first page yet lol

like Spress said, lots of backlinks (high PR if possible) and on page SEO.

It all depends, sometimes Google will take a few days before you move up, sometimes a few weeks. Check how often Google bots visit your page with success. If they are frequently visiting with success, your site should move up rather quickly.
