How much of your anchor text is your main keyword?

I have a new site still flitting around page 20 after 2 weeks of SEO (fingers crossed that it comes up soon) but I've been wondering... when building links, how do you make your main keyword the primary anchor text so that you rank for that phrase but at the same time vary your anchors enough that it doesnt look suspiscious? Thank you!
