On Page SEO For Wordpress Tag Pages

Hi folks,
I've been running Wordpress blogs targeting various keywords, and most of my traffic is organic through those targeted keywords.
I'm fairly new to the game, been doing this less than a year, and I've had one issue that's been driving me a bit batty: a lot of the keywords I rank for give URLs to a Wordpress tag page. For example, if someone is searching for "wordpress themes," my site may rank on the first page of Google with the URL mysite.com/tag/wordpress-themes/
My issue has been trying to figure out how to SEO the onpage elements for the tag pages--so description, headers, title...
How do I go about doing this? I've been using All-In-One SEO with some success, except for in this scenario (as far as I'm aware). I don't have much programming experience, though I'm willing to learn if necessary. That said, I'm hoping there's a WP plugin that could help me take care of this efficiently, saving me time.
And is it worth building backlinks to these tag pages (I assume I'll be told "YES!")?
